Marinated Lamb Chops
- 12 Baby New Zealand Lamb Chops
- 6 Tablespoons of Olive Oil
- 5 Garlic Cloves Chopped
- 1 Teaspoon Fresh Ground Pepper
- 2 Teaspoons Chopped Fresh Oregano
- 6 Tablespoons of Lime Juice
- ½ Cup of Red Wine
Mix all ingredients for the marinade. Marinate lamb chops for 3 to 4 hours Preheat broiler for about 30 minutes. Broil on rack about 3 inches from the heat. Brown on both sides to your liking (rare, medium rare, medium or well); best recommended is medium rare.
Serve with baked potato, asparagus spears, carrots and mint jelly. Garnish with parsley and orange twist.
